Weekday Meals

Hi there! Here’s a weekday meal for you to try.
Monday evening I start by boiling some green veggie pasta. While the pasta is boiling I cover the bottom of a frying pan with light olive oil. I then open a jar of sliced mushrooms and drain the liquid from the container and cover the bottom of the pan with the mushrooms and spread them evenly. Next I open a can of organic red beans and drain the liquid from the can and rinse the beans once or twice with water to remove any chemicals used in the storage process and pour them in on top of the mushrooms and spread them evenly. I cover the pan with a lid and set the heat to medium. In about ten to 15 minuets the pasta and veggies are ready to eat. Cook the beans with enough heat to make them burst open but watch them, so you can take them off  once they do this, or they will burn and get crispy.  Cooking beans this way seems to eliminate most of the gas you can get with eating beans. Now I have a very filling meal in a short amount of time right after getting home from work. Two cans of veggies and a hand full of pasta is a lot of food, so there’s no getting hungry again before bed. Cooking for myself is one of the key ingredients of my success in staying fit and trim with little effort and no workouts!

        Sometimes I have Croissants  with nothing on them and  Decaf coffee in the mornings! It reminds me of Paris. Honey is my preferred sweetener for the coffee but brown sugar will do .
